Crock Pot Chocolate Cake

Yes, you read that right, a chocolate cake that you make in the crock pot.  Dangerous I know!!
I must admit I have not actually tried this recipe out yet, my friend Sheena gave me the recipe and she made it as a dessert to bring one night when our families had dinner together.  So while I have not personally made it yet I can say that it tastes AH-MAZ-ING!  Just thinking about it and looking at the picture makes me drool.

Cake topped with whipped cream

It has the consistency and characteristics of a Chocolate Lava cake once it is finished.  The cake will look like it may need to cook a little longer but I promise it is done.

* You will need at least a 4 qt crock pot for this dish.

What You Will Need-
1 Box of German Chocolate Cake mix-any brand is fine
1 (3.9 oz) package Instant Chocolate Pudding Mix
3 large eggs
1 cup sour cream
1/3 cup butter-melted
3 1/4 cups milk (divided 1 1/4 cups and another 2 cups)
1 (3.9 oz) package Cook-and-Serve Chocolate Pudding Mix
1 1/2 cups Mini Marshmallows
1 cup Semi-Sweet Chocolate Chips
1/2 cup Chopped Pecans (optional)
Vanilla Ice Cream (optional)

Step 1: Make the "First Layer" to go in the Crock Pot-
Beat cake mix with the instant chocolate pudding, 3 eggs, sour cream, butter and 1 1/4 cups of the milk.  Use an electric mixer and mix on medium speed for 2 minutes stopping to scrap down sides as needed.
Pour batter into crock pot.

Step 2: The "Second Layer"-
Cook remaining 2 cups of milk in a saucepan over medium-high heat.  Stir milk often, cook 3-4 minutes or until milk starts to bubble (not boiling).  You want to heat it like you would if you were going to make hot chocolate, hot but not boiling.
Remove milk from heat.
Sprinkle the cook-and-serve pudding into the crock pot over the "first layer".
Slowly pour hot milk into crock pot.
Cover and cook on low for 3.5 hours.

Step 3: Add Toppings and Serve-
If you want to use the pecans, heat them in a nonstick skillet over medium-low heat, stirring often for 3-5 minutes or until they are lightly toasted.  This is optional as Sheena learned, haha.  She had a pregnancy memory lapse and forgot she put the pecans in the pan until she smelled them burning.  You know I love you Sheena!
Once Cake has cooked 3.5 hours turn off the crockpot. Sprinkle marshmallows, chocolate chips and pecans over the top of cake,
Let stand for 15 minutes.  We were unsure if the lid should be on or off during this time, we opted for half on half off but decided afterwards it should probably be left off.
Spoon into dessert dishes and serve warm, with ice cream if desired

cake in the crock pot all, ready to dish up and eat

As I stated above, the cake will appear as if it is slightly undone still, if you have ever had a Chocolate Lava cake you will  know this is ok but if you haven't this may concern you.  It is supposed to appear this way, I promise you didn't goof up.

Love,
Christy & my guest Sheena
