Bacon and Garlic Green Beans with a Balsamic Glaze.

Thanksgiving doesn't need to be complicated.  Here is a super simple veggie side.

Ingredients.
2 tbsp of butter.
2 cloves of garlic
3 strips of bacon cut into small pieces
1 lb of fresh green beans with the ends trimmed off.
1/2 cup of balsamic vinegar


Add your trimmed green beans to a pan with a little bit of water and cook them just until they turn bright green.  Then put your green beans into a bowl of ice water to stop the cooking process.  Let them chill for a minute then drain and dry off on paper towels.  Set aside for the moment.


Add 1/2 a cup of balsamic vinegar to a saucepan and put it over medium high heat.  Whisking very frequently, bring to a gentle bubble.  You want to cook it until it reduces by about 1/2.  It will still look watery in the pan until it cools off a bit.  Warning this is a smelly vinegary process.. you might want to do this the day before if you have a house full of guests.  It will stay beautifully on the counter covered for a day or so.  Definitely open a window.


Brown your bacon in a pan until its nice and crispy.  Drain and set aside.

Add the butter to the empty pan you cooked your green beans in and sautee the 2 cloves of garlic on medium heat until fragrant. Watch your garlic, because burnt garlic can ruin a dish.  Once the garlic is cooked, add your cooked beans and bacon back to the pan and toss together until warmed through.


Put in a serving dish and drizzle with your balsamic glaze and you are good to go!

The Star of the Show.... The Turkey!

Hopefully by this point, you have your turkey defrosting in the refrigerator, or you purchased a fresh turkey, 

What would Thanksgiving be without turkey!?  Not that home-cooked meal you have such fond memories of.  In my opinion, Thanksgiving is the one holiday I don't my food messed with.  I want it to taste just like my mom and dad always made.  I was thinking of stepping outside the box and making a rub with orange peel and such, but in the end, I decided to go with my dad's trusty recipe that always turns out amazing.  


I always bring my turkey to room temperature before I do anything to it.  I just stick mine in the sink, still wrapped in the packaging it came in, for about an hour.  Then preheat your over to 325 degrees.  Open up the turkey packaging and make sure you remove the neck and the other innards from the cavities from the turkey (this year I had a neck in the front and the giblets in the back, so make sure you check both!)  Rinse your turkey inside and out and pat dry with paper towels.

Now maybe you are fancier then me and have one of those pans with a roasting rack in it, then bring that bad boy out!  If you are like me, and do not own a a special turkey pan, then you can use a big roasting pan with deep sides, or even one of those disposable turkey pans that are all over the grocery stores this time of year, and I create my own "rack" on the bottom of the pan with pieces of carrots and celery.  All you are really trying to do is get the turkey off the bottom of the pan.

Now the only thing worse then a dry turkey is a turkey with no flavor.  This is what I use to flavor my turkey.  I make an herb butter with poultry seasoning, sage, and thyme.  Just let your butter come to room temp and mix in some herbs and set aside for a bit..  you could do this the day before and cover with plastic wrap and let it hang out on your counter til the next day.  I also stuff the cavity with more celery and carrots and also lemon halves.
 Place your rinsed and dry turkey on your rack in the pan, or your makeshift rack.


Now season your turkey inside and out with salt and pepper before spreading the herb butter all over it.
 Stuff the cavity with your celery, carrots and lemons, and then smear the herb butter all over the outside of the turkey.

Its best if you can use yout hands and seperate the skin from the meat a bit and get the herb butter under the skin. This will keep the turkey more moist and give it more flavor. Expect messy hands, cause I used both to make sure my turkey was cover on every inch of the outside of this 14lbs body.

 I put a little bit of turkey stock in the bottom of my roasting pan, just to give something to start basting with before the turkey starts give off its own juices.  If you can't find turkey stock in your store, chicken stock is just fine too.

Place your turkey in your 325 degree preheated over and ignore it for about 45 minutes.  Then baste it with the juices on the bottom of the pan.  Repeat basting about every 20-30 minutes. 
 A lot of people will at this point, cover their turkey with aluminum foil so it doesn't brown too much, but I don't, this isn't brown enough for me.  I would if I though it was getting too brown, but I haven't the past two years, so do what looks right to you.

My 14lbs turkey took about 4 hours to cook, the pop up timer DID work, but I suggest getting a meat thermometer and a cooked turkey will ready about 160 degrees in the meatiest part of the breast, remember while it rests while you finish up the rest of your meal, it will continue to cook a bit.

When you get that 160 degree reading, pull your turkey to a cutting board and cover it with foil while you finish up your meal.


 Finished product results in a golden brown, super juicy, traditionally tasting bird!

Pumpkin and apple empanadas (turnovers)

I have always wanted to know how to make empanadas ("ehm-pah-nad-ahs")  but being that my mom was a busy working woman and not the cooking type I never got a recipe, everything I learned from her is simple and quick..

I googled how to make empanadas even did it in Spanish (como hacer empanadas)  I had too many answers and nothing I liked.. I still like simplicity but I wanted something somewhat authentic..  I found things ranging from using frozen pie crust, to ready made from  the brand Goya to overly complicated doughs involving yeast, which to tell you the truth horrifies and scares me.. maybe it's that I love Lucy episode where she added too much yeast to homemade bread and then ended up getting attacked my it  ha ha.. I know silly huh?

Anyway I took things from here and there and experimented..  they came out great, and there is ways to make it easier, tired of pumpkin pie? Scrape the filling and add it to the empanadas..  I did make my pumpkin ones with the same method to make the pumpkin pie filling (minus the clove I think clove is too strong for my palate I never was keen on it.)  and the apple ones were super easy!.

The beautiful part of this.. is that empanadas can handle anything, pineapple pumpkin, sweet potatoes, yams, apple, figs! pretty much any fruit AND on top of that you can make dinner ones not necessarily dessert, you can make "picadillo" (ground beef w/veggies), ham and cheese, chicken, beans and cheese etc.. I truly love dishes that you can make your own... this recipe is a raw one, please feel free to add or take away or to make it different.. if you have a different way please share, I would love to perfect my method.. and  seriously go play with this recipe and share! have fun! I dare you! ;)

You start off  by making the dough of course, you will need:

4 cups of flour
2 TBS of butter COLD
12 TBS of Vegetable Shortening  (about 3/4 of those crisco sticks) COLD
4 TBS of sugar
3 tsp of salt
2 egg YOLKS
1 cup of water

mix the dry ingredients first, flour salt , sugar
add the butter and lard and mix it in with a fork just keep cutting it in with the fork as much as you can.

Whisk the egg yolks and water together and add it little by little while kneading the dough. The dough is going to look a bit like drying play dough don't worry make a big ball with it and saran wrap it and throw it in the fridge, let it cool for at least an hour.


flour the surface you will work on with a rolling pin stretch out balls of dough on the table to about 1/4 inch thick. cut them with a large cup or circular container depending on the size you want them.
Add the filling to the very center do not let the filling extend to the edges or it wont close.  For pumpkin you can use the canned pumpkin pie filling or make your own.  I made half pumpkin and the next day made apple ones..  2 apples chopped into small chunks boiled for 5 minutes then sauteed in a saucepan with 1 TBSP butter, 1/8 cup of sugar and a whole lot of Cinnamon ;).  I tell you, I love easy! <3


close them and mark them with a fork...


Pop them in the oven 350 degrees for about 30 minutes or until dough is firm, sprinkle them with Cinnamon and sugar and enjoy!

Blueberry Muffins- Perfect for Thanksgiving Morning.

Sometimes holidays require you to feed others more meals then just the big holiday meal.  Blueberry Muffins are a quick and yummy crowd pleaser that you can make in advance for your guest to enjoy.  A nice and light breakfast before that huge turkey dinner, and if you make then ahead of time, its one less thing you need to make on top of whatever your holiday meal includes. Just brew a pot of coffee or tea and you are done!

Blueberry Muffins

4 cups AP flour
4 teaspoons baking powder
1/2 teaspoon salt
1 cup of butter (softened)
2 cups sugar
2 teaspoons vanilla extract
4 egg
1 cup milk
2 cups blueberries (fresh or frozen)

 Preheat your over to 375 degrees.

Combine your dry ingredients and set aside.

In a separate bowl cream your butter and sugar.


Add your eggs, add your milk and vanilla and mix well.

Slowly add your dry ingredients to the wet and mix until just moist.

  Add your blueberries and gently fold into batter.

Divide into muffin cups that have been lined with cupcake papers.

  Bake at 375 for 20-25 minutes until the tops start to get golden brown.
 Cool 10 minutes in the pan before removing to finish cooling. 



Makes about 24 muffins.

3 Moms "Turkey Day Tips " Contest

We are so excited to announce our very first contest and we hope you all will participate!!


We would like to compile a list of tips, tricks and great ideas for The Big Day and we would hope you all will provide us with yours.  Anything you do to make the day run more smoothly, help it be (somewhat) stress free, keep the kiddies entertained, tricks for great side dishes, how to make the perfect turkey.  Anything and everything you can think of, and are willing to share, to help others out.  If someone had never been to or thrown a Thanksgiving Day meal what tips or advice would you give them?

Leave your tips here in the form of a comment on this blog, not on the Facebook page.  Leave your first name, last initial if you like and your state (city is optional).  For example if I was leaving a tip I would leave a comment similar to this:
