I don't think I can really call this a recipe... It is pretty much just adding bananas to the french toast recipe I use. French Toast is a super easy, super affordable, and definitely not only for breakfast! And you probably have all the ingredients on hand all the time, so its a good quick go to item.
Ingredients (serves 2-3, but easily doubled or tripled!)
(all measurements are approximate.. You can't mess this up y'all!)
4-6 pieces of bread
1-2 tbsp butter
2 eggs
1 1/2-2 cups of milk
2 tsp vanilla extract
2 tsp cinnamon
2 tbsp sugar
2 bananas cut into slices
Directions
-Heat a large skillet over medium heat.
-Whisk together your eggs, milk, sugar, vanilla, and cinnamon.
-Dip each side of the bread into the mixture and place into hot skillet. I can get 2-3 pieces in at a time.
-Add the banana slices to the side that has not hit the hot pan yet.
- After you lightly brown the first side, flip carefully. The bananas will use the egg mixture like a glue and will stay on the bread well.
-When both sides are golden, remove from pan and finish the other slices.
-Add some warmed up maple syrup and a side of bacon or sausage or corned beef hash!

Cinnamon Rolls.
I have to admit, I love me some regular old Pillsbury cinnamon rolls in the can you have to "pop" open... But.. I like controlling the ingredients my family eats, so I made my first batch of homemade cinnamon rolls.. This is the recipe I use for homemade cinnamon rolls.. and it made soo many, I froze half of them.. We will see how good they defrost!
Ingredients
1/2 c. very warm water
1 T. sugar
2 T. yeast
1/2 c. melted butter
2 eggs
2 t. salt
1/2 c. sugar
1 1/2 c. warm milk
5 1/2 c. flour
butter
brown sugar
sugar
cinnamon
Icing
They were good! They were my first try and I think I have some room for improvement. I think I needed to let the dough rise longer, but I am a but impatient.. just ask my poor husband :o)
Ingredients
Icing
- butter
- vanilla
- milk
- powdered sugar
- Combine water, 1 T. sugar and yeast. Set aside for 5-15 minutes to activate.
- Mix 1/2 c. sugar, melted butter, eggs, and salt. Add yeast mixture.
- Stir in warm milk.
- Add 5 cups flour, 1-2 cups at a time.
- Knead dough on a well-floured surface, adding flour as necessary, until dough isn’t sticky.
- Let rise until double in a clean, oiled bowl.
- Punch down risen dough. Separate into two pieces.
- Roll out dough in a large rectangle. Spread with softened butter. Sprinkle liberally with brown sugar, white sugar, and cinnamon.
- Roll dough. Cut into about 12 (1-inch) rolls. Place in 9×13 pan. Let rise until double.
- Bake at 350° for 20-22 minutes.
For icing, melt butter (about 2 T.). Add 1 tsp. vanilla and 2 T. milk. Sift powdered sugar into mixture and stir well. I never measure this. You can absolutely use more of any ingredient. Spread icing while hot.

Blueberry Muffins- Perfect for Thanksgiving Morning.
Sometimes holidays require you to feed others more meals then just the big holiday meal. Blueberry Muffins are a quick and yummy crowd pleaser that you can make in advance for your guest to enjoy. A nice and light breakfast before that huge turkey dinner, and if you make then ahead of time, its one less thing you need to make on top of whatever your holiday meal includes. Just brew a pot of coffee or tea and you are done!
4 cups AP flour
4 teaspoons baking powder
1/2 teaspoon salt
1 cup of butter (softened)
2 cups sugar
2 teaspoons vanilla extract
4 egg
1 cup milk
2 cups blueberries (fresh or frozen)
Preheat your over to 375 degrees.
Combine your dry ingredients and set aside.
In a separate bowl cream your butter and sugar.

Add your eggs, add your milk and vanilla and mix well.
Slowly add your dry ingredients to the wet and mix until just moist.
Add your blueberries and gently fold into batter.
Divide into muffin cups that have been lined with cupcake papers.
Bake at 375 for 20-25 minutes until the tops start to get golden brown.
Cool 10 minutes in the pan before removing to finish cooling.
Makes about 24 muffins.
