Name That Recipe Contest and Giveaway!

Today we have a special post for y'all! I am going to post a recipe below that has no name.  Its something my mom had me make one evening when I was low on ingredients and time.  Now if you are counting calories, this might not be the chicken dish for you, but it sure is yummy and simple and quick!

But what makes this post special is that it isn't just a recipe this time, its a contest and a giveaway!  This is where our lovely readers come in.  We want YOU to name this recipe!  Something fun, or quirky, or whatever!  Be creative!  And then Tanya, Christy, and I will each pick our personal favorite and will submit those to random.org to pick the final winner.

SO.. without further ado.. Here is the recipe we need you to name!

Ingredients

 -1 boneless skinless chicken breast per person
 -mayonnaise
 -shredded cheddar cheese
 - crackers (I used Ritz)
- salt and pepper



Directions

- Pound out your chicken breast so its an even thickness

- Season with salt and pepper

- Add some mayo to a bowl
 
- Add a little shredded cheddar to the mayo and stir it together

- Crush some crackers into another bowl and season the cracker crumbs with salt and pepper.

- Spread some of the mayo mixture onto one side of the breast.

- Sprinkle cracker crumbs on generously and press down with hand to make sure they are good and stuck.

-Flip chicken over (I put it right on my nonstick cookie sheet) and repeat.

-Bake at 350 for about 25 minutes, until chicken is fully cooked.

4 Ingredient Buffalo Chicken Pasta

  Ingredients
1-2 boneless skinless chicken breasts, cut into bite size pieces.

1 bottle or jar of blue cheese dressing ( I used about 1/2 the bottle, but you may want more)

2-4 tbsp of buffalo sauce or wing sauce or something like Franks Red Hot, or more if you like it hot!

1 lbs of pasta, like penne or radiatore

Directions
1. Cook pasta, drain, and set aside.

2. Cut up chicken into bite size pieces, and roll in flour, or don't, its all good.

3. Brown chicken in some oil and butter.

4. Set chicken aside, and wipe the pan clean.

5. Add chicken back into wiped out pan and add the buffalo sauce.

6.Cook for 2 minutes then add the pasta.

7. Add blue cheese dressing, start with 1/3 of a bottle and go from there..

You could probably use ranch dressing if blue cheese isn't your thing.. If you do try it with ranch, leave a comment and let us know how it was!

Lazy Day Slow Cooker ideas-Tons of recipes from 2 easy steps.

So, its the Holiday Season, are you as busy as we are here at 3 Moms?  I know we have not been posting much and we apologize for that.  I don't know about the other 2 moms but in my house things have been crazy with Christmas parties, preschool Christmas programs, visiting Santa, and even a yucky 2 week long ickiness that swept through the family.  Things are slowing down as Christmas approaches so hopefully the posts will pick back up.

With all the craziness that I am sure we all are experiencing right now I thought I would share some easy ideas that I have been taking advantage of the past few weeks.  I seriously make some sort of version of the following at least 4-5 days a week.  These are so easy and so versatile, I am sure you can come up with some ways I haven't thought of to use these.  If you do please share here or on our FB wall.

What You Will Need:
a crock pot
some sort of cut of chicken or pork.  Any cut of either will work
1 jar of salsa OR 1 bottle of BBQ sauce.


Step 1: Cook meat-
Take whatever cut of meat you are using and add it into the crock pot.
Add in either 1 jar of salsa OR 1 bottle BBQ sauce depending on what you are wanting to make.
Move around a bit so that sauce is covering all sides of the meat.
Cook on low 5-7 hrs. (depending on cut-bone in and larger cuts take longer)


Step 2-Decide what dish you would like to "feature" the meat in-
This is the fun part, there are so many delicious ways to serve this up, the combinations are almost endless.  I am going to list a few of our families favorites.  Use your imagination and I am sure you can come up with many more than I have listed here.

Pork Tenderloin + BBQ Sauce-  With this I can make pulled pork sandwiches on homemade buns (click here for recipe).  Or I just shred up the pork and serve with homemade rolls (same dough recipe as buns) and mashed potatoes (made with golden Yukon potatoes YUM!).  Use the BBQ sauce as a "gravy" over the pork meat and potatoes, SO GOOD!
You can also serve over a bed of rice (any rice you like, we like Jasmine rice), I like to mix in some steamed broccoli to this.

B/S Chicken Breasts (or bone-in chicken breasts) + Salsa-  If using bone-in breasts shred meat off of bone before serving.
With this I can shred the meat up to use in a whole gamut of Mexican dishes including chicken soft tacos, chicken burritos, chicken hard shell tacos, chicken tostadas, Tanya's Potato Tacos, quesadillias, chicken enchiladas, etc etc. You can make it as easy or as hard as you want.  Mix it up with flour and corn tortillas and serve with all of your families favorite toppings.  We like more salsa, sour cream, lettuce, tomatoes, cheese, avocados and black beans.

Pork Chops + BBQ Sauce- Easy way to make BBQ pork chops w/o all the work, serve with you favorite sides.

B/S Chicken breasts + BBQ Sauce-  Again you can use bone in chicken breasts too, just shred meat off the bone before serving.
Like the pork tenderloin above you can serve the chicken as is with mashed potatoes and rolls, you can shred to make pulled BBQ chicken sandwiches or you can serve over rice with broccoli.
Another thing you can do is make some pizza dough (this dough recipe makes great pizza crust too).  Make sure to scoop out some sauce to use as the pizza "sauce", top with cheese and any other topping you might like.  Makes an excellent BBQ chicken pizza.

Bone-in Chicken legs, thighs, or wings + BBQ Sauce- An easy meal to make BBQ chicken, serve with your favorite sides.  If you like dark meat you can also do any of the above things for the chicken breast and BBQ sauce.

Pork tenderloin + Salsa- You can make any of the same dishes under the chicken breast and salsa.

I am going to start experimenting with things to make using a jar of spaghetti sauce and various meats.  I will let you know what I come up with.

brush with oil and bake in the oven at 350 for 15 minutes to make crisp.

I thought I had more pics than this, they may have been lost last month when our computer crashed.  I know I had a picture of the BBQ pork tenderloin.  That's what I am making for dinner tonight in fact so I will take a pic and upload it after dinner.

Cornflake Oven Fried Chicken

This recipe was given to me by a good friend, it is the BEST fried chicken ever. I don't make fried chicken any other way anymore.
You can use any cut of chicken you like bone in or bone out. I normally use boneless/skinless chicken breast and that is what I have listed here. I have used bone-in breasts and legs before as well.

What You Will Need:
2-4 Boneless/Skinless Chicken Breasts-depending upon family size an appetite
1-2 Cups of Corn Flakes (any brand) cereal
1/3 cup butter, melted-in an effort to be healthier I have started using 1/3 cup EVOO (extra virgin olive oil)**
Seasoning to taste

Step 1: Prep the Chicken-
Rinse off chicken breasts and pat dry.
Cut off any excess fat and cut breasts into strips (optional, an leave whole just take longer to cook).  Each breast will make 2-3 strips depending on size.

Step 2: Prepare Cornflakes and Bake Chicken-
Crush 1-2 cups (depending upon how much chicken you are using) of corn flakes in food processor.  If you do not have a food processor this can be done by putting them in a plastic bag and using a rolling pin to crush, you can also just use your hands.
Season the flakes with whatever seasonings you and your family enjoys with chicken.  I use Garlic Powder, Onion Powder, and Pepper.  I do not measure these, I just sprinkle them in.  Maybe 1 teasp each of the powders and 1/2 a teasp of pepper to start if you are not sure pf how much to use. 
Lightly salt chicken
Dip all of the chicken into the melted butter
Coat chicken with crushed corn flakes
Place on a foil lined baking sheet

Chicken in butter
 Bake chicken in oven at 350 for 40-45 minutes.  Larger pieces of chicken will take longer, maybe 45-60 minutes.












Chicken all ready to go in the oven



As I said above, this is the only way I "fry" my chicken now.  Much easier, no more standing at the stove flipping chicken trying to cook evenly on all sides. The chicken comes out perfect every time.  The outside is nice and crispy and the inside is moist and tender.

**You can use the butter or EVOO, it tastes the same either way but the EVOO is a healthier optioon.  I didn't even tell my hubby I made the switch.  He can't tell the difference and he is very anti-healthy foods haha (shhhhhhh,don't tell him!)

Chicken Stir Fry... The easy way!

This is the easy version..
get a packet of stir fry seasoning found in the spice section
of your local supermarket. for every lb of chicken you have.


1-2 chicken boneless skinless chicken breasts cut into cubes.
and take your pick or amount of any of these usual stir fry veggies.
broccoli
baby corn
water chestnuts
bamboo shoots
red (yellow or green) bell pepper
scallions (to taste)
snap peas
carrot
cabbage.
soy sauce (I like using liquid aminos better)

The beauty of this dish is you can add or take away any of those or your own ingredients
and still have an impressive dish, if you are a picky eater this is for you! add what you like!

You sautee the chicken in a large skillet or wok with a bit of olive oil some salt and pepper and the chopped scallions.



once it's browned you add the tough veggies first, for example the broccoli, the peppers, the chestnuts and go ahead and add the packet flavoring according to its instructions.

let it simmer for a bit with a lid so the veggies can cook (about 5 mins)
next add the medium veggies, like bamboo shoots, snap peas, carrot etc. simmer a bit more (about 2 mins)

lastly add the cabbage as much as you'd like I like a lot in mine because by the time it's cooked you can hardly see it!
simmer another 2 minutes with the lid..

give it another good toss and serve over white rice!!


and impressive yet easy dish!
