Butter Rolls-A Staple Side for Turkey Day.



I make this dough using a bread machine.  In theory you could use a nice stand alone electric mixer or even mix by hand.  I would suggest trying this out a few days in advance though as I have only ever made it using the bread machine.  If you do decide to try it with a mixer or by hand I would say to mix/knead the dough for about 20 minutes then place in a lightly greased bowl and cover for about 1.5 hrs to allow to raise.  Then follow the rest of the instructions below for rolling out, shaping and baking the rolls.  If you do make them without a bread machine please report back on how they turned out as I am curious about this but have just been too lazy to try it out myself.


What You Will Need:
1 egg, beaten
3/4 cup milk
1/4 cup water
1/4 cup butter, melted
2 Tblsp sugar
1 teasp salt
2 3/4 cups flour
2 teasp yeast

Step 1: Mix the dough-
Add ingredients in the order listed above to bread machine.  With bread machines you always add liquid first, then dry.
Set machine to the dough setting and walk away.  Machine will do the rest for you mixing, kneading and raising.

Step 2: Shape Rolls and Raise 2nd Time-
When machine beeps that dough is done dump out onto lightly floured surface.  Roll out with lightly floured rolling pin into a large circle.
Cut like a pizza into 16 equal(ish) triangles.
Roll each triangle into a ball and place on ungreased baking sheet.

Cover and allow to raise 20-20 minutes or until dough has doubled in size.

Step 3: Bake Rolls-
Bake at 250 for 20 minutes.
Once baked rub the tops with butter.


These are best served fresh and hot.  I would not suggest making the day before Thanksgiving as they dry out quickly.  Make the day of.  The recipe yields 16 rolls so for a big family gathering you may have to go through the Steps 2 times.  As soon as you dump the dough out from the first batch start the second and THEN shape and roll out the dough so they are as close together as possible.

I am sure that most of you have noticed I only have 15 rolls in the pictures, thats all my pan can hold so I incorporate the dough from the 16th roll into the other 15 (or let my 4 yr old play with it if he's "helping").  The recipe does make 16 though.

I seriously use this recipe a minimum of 3 nights a week, maximum about 6 (maybe even 7 haha).  They are the perfect rolls to take to Thanksgiving and go great with almost any meal.  They are also good to make mini sandwiches on, I use whatever is leftover from dinner the next day.  I have done lunch meat, egg and tuna salad, even egg and bacon breakfast sandwiches.  My 4 yr old enjoys PB&J or PB&Honey sandwiches on the leftover rolls.  I have even made them fresh for dinner with the purpose of using them as sandwiches.  I have also shaped them into 8 large rolls (baked for the same ammt of time) and used them as "hamburger buns", they were the best hamburger buns ever.  I don't buy rolls or hamburger buns anymore, I only use this dough.  I keep wanting to try it as pizza dough but have not yet.  I have made cinnamon rolls with the dough, YUM YUM!  I will post that recipe soon and link it here when I do.

I would like to learn to bake using some wheat flour too and have been told you can use 2 cups of white and 3/4 cups of wheat with this recipe to incorporate the wheat flour in.  I have ye to try this out myself.  If you try this report back as well please.

  1. Made these last night & LOVED them!!! Used my stand mice & mixed about 17min, thought it looked good at 15, but gave it a few more minutes. I let it rise for about an hour, made into small balls & let them rise for another 45 min or so (could have let them go longer but needed to get them in the oven). Here is where I ran into a snag, I set my oven for 250 as directed, but 45 min later they were not brown so I turned it up to 350 & they were done in another 10 min or so. Is the temp right in the directions?!?

    1. Same temp thing happened to me. It must be a mistake. Most of my other bread recipes are 325 or 350 degrees.

  2. These are seriously delicious, thank you for the recipe! I've made these once before and have another batch in the oven right now. I've used the dough also for cinnamon rolls, and the husband loved them.
